Hope Chest Journey, Day 2

The past couple weeks have been filled with opportunities for hospitality and growth.  Much of my time has been developing another website for our local homeschool support group and  online forum.  You can learn more about them at DohaHomeEducators.com

Today Samuel told me that he desperately needed pancakes. He was very happy with the results. 🙂

The pancakes are whole wheat with fresh sliced nectarines and bananas topped with fresh whipped cream.

1 tbsp. Agave Nectar
1 3/4 c whole wheat flour
1 tsp. baking soda
2 tsp baking power
1 tsp. salt
2 c. buttermilk (I add 1tbsp lemon juice to milk and let it stand while I mix the other ingredients)
2 eggs
1/4 c oil
1 tsp vanilla (opt)

Slice Fruit of your choice

Whipping cream, dash of salt and vanilla (No Sugar)

Whip cream until it stiffens then add salt and vanilla.

NOTE: In our area Lebanon peaches and nectarines are absolutely wonderful.

Due to health reasons, I avoid sugar as much as possible.  Agave nectar has been a great substitute but I still use it with caution.
