BFS 113 – Finger Lickin' Good

Intro: Finger Lickin’ Good –  Read about Christ feeding the 5,000 in many places in the Bible

(Matthew14:19;15:36; Luke 5:6;9:3-17).

During the holiday season, you might have so much going on that you need to make a meal quickly with as few ingredients as possible. This week post your favorite recipes that require six (6) ingredients or less. Can’t wait to see what you come up with!

Spanish Rice:

1 large onion

1 green pepper

2 cans diced tomatoes (or salsa)

2 cups of rice (I prefer Basmati)

1 or 2 Kielbasa Smoked sausage (I like Hillshire Farms Turkey Kielbasa)

Olive oil

Basil and thyme to taste

1.  Follow directions on rice to make 2 cups.  (I use my rice cooker)
2.  Dice green pepper and onion and saute them in the Olive oil until they are translucent.
3.  Slice the sausage in half lengthwise and then again across (smaller pieces) add to pan with onions and peppers.  Add basil and thyme.
4.  When the sausage is cooked through, I add the tomatoes, just enough to make it liquid enough to add the rice without it being dry.
5.  Add the rice to the pan.

With one sausage it makes enough for 5 or 6 with two sausages it can extend to 8 or 10 depending on how much meat you like.

This recipe has received rave reviews from the family and friends that I’ve served it to.   It is easy to make and takes about 20 minutes from beginning to end.

Serve suggestions: salad, green vegetable and sliced fresh fruit.

Pita Pizzas

Enough pitas to feed your family (I like whole wheat)
Jar of pizza sauce
Mozzarella cheese

Toppings of your choice: pepperoni, pineapple, mushrooms, onions, peppers (any color), olives etc.

1.  saute your toppings
2.  Put pitas on a cookie sheet and add sauce and ingredients
3.  Cook in 400 degree oven until cheese is melted and toppings warm

Serving Suggestions:
Side Salad

Taco Soup

1lb ground beef or diced chicken

1 corn
1 black beans
1 kidney beans
2 diced tomatoes
1 package taco seasoning
chili powder to taste

1.  Saute your onions
2.  Brown beef (could use diced chicken)
3.  add in corn, beans and diced tomatoes
4.  Add package of taco seasoning/chili powder to taste
5.  Heat through.

Serving Suggestions: Cornbread, tortilla chips, sour cream, shredded cheese, salsa

This recipe can expand to whatever your needs are for the meal.  You can use frozen, fresh or canned.  I would just use it as 1 cup or 1 can to keep the ratio.  Certainly if you like one ingredient more than another change it.

We usually make this so that cornbread or tortilla chips are at the bottom of the bowl then add your taco soup then whatever toppings.

These are our family favorites.
